the key is more the half stop before the acceleration, cause he forces the defender to loose his speed and change his feet, and that is what makes him difficult to stop in 1×1, but in exchange he is been quite predictable. To be a complete threat you need to mix that with the cut in dribble as well. But his body position and outside touch is definitely important
in addition to the touch on the foot, there are 2 other things you should mention that he does incredibly well: 1. quick drop of the shoulder before exploding the other way 2. his overall speed before he explodes one way, he drops his shoulder just enough to make the defender slightly off balanced so Mitoma gets a head start. Once he goes, Mitoma is also very fast naturally so he's able to take advantage of his move. Without the shoulder drop or fast speed, this move is very easy to defend against
