After much searching, I managed to find the Everton Korea supporters group, and met up with them at Opus Pub to watch the derby (10pm kick off local time).
They are in the process of trying to become an official supporters group, and meet up as often as they can (time zones don't always work great for games in Korea).
If you are ever in Seoul and looking for a spot to watch games, hit them up (Instagram is the best option – @evertonfckorea).
