Sexy Lobster will take over the former Neo site in Exeter Road, benefiting from the glass circular panoramic dome that overlooks the sea.
Serving luxury ingredients and champagne while overlooking the water, Sexy Lobster is set to open on Friday, April 17 with bookings now open.
It will be led by hospitality entrepreneur Howard Spooner and executive chef Olivia Brinkley.
The menu is said to feature ‘standout produce’ such as Poole bay rock oysters and lobster, Cornish crab, Dorset beef burgers and ribeye steaks to Isle of Wight Tomatoes.

Sexy Lobster’s executive chef, Olivia Brinkley, has been using her expertise at her family’s restaurant Brinkley’s in Chelsea.
Her experience also includes internationally renowned Zuma and Sydney’s acclaimed Tetsuya’s.
Although Sexy Lobster will prominently feature seafood, a nod to the town’s coastal setting, the venue is said to be more than a seafood restaurant.
Dishes will include ‘Grilled Sexy Lobster’ with garlic, yuzu, myoga ginger butter and shichimi chilli.
As well as veal Milanese with tagliatelle arrabbiata, dry aged Dorset ribeye with béarnaise and fresh shaved black truffle with tagliatelle, parmesan cream and hazelnuts.

The venue will also feature a comprehensive wine and Champagne drinks list with Rosé alongside Campden Hells, Guinness and innovative cocktails.
Howard Spooner, hospitality entrepreneur and Founder of Sexy Lobster, said: “We wanted Sexy Lobster to feel like somewhere people can really celebrate the Bournemouth seafront – whether that’s a long lunch with rosé, dinner overlooking the water or drinks that turn into an evening.
“The location is incredible and we’ve built the restaurant around fantastic produce, a strong drinks list and an atmosphere that feels energetic and indulgent.”

Chef Olivia Brinkley said: “My menu reflects how I love to cook and eat; simple, ingredient-led dishes using the highest quality produce available.
“I’ve always been drawn to innovative flavour combinations, taking influence from around the world while keeping things grounded and approachable.
“Freshness, balance, and variation in texture are crucial to each dish, but without ever becoming overly fussy.”
Brinkley, who is a self-taught artist, has also created the original Sexy Lobster artwork which is used throughout the venue.
Spooner also owns The George Hotel on the Isle of Wight and its Bollinger boat G Dogg, which will offer transport from the hotel to Sexy Lobster.
