Comparing Simons Eredivisie stats to Eze's Premier League stats is not that useful. He's a good player but I wouldn't say he's better than Eze at this point in time.

I remember when the window was just opening or just about to open that you guys did a video where you talked about Eze or Simons and you went with Simons. I thought you were crazy at the time, but looking more into Simons and this video, I now agree with Simons over Eze
For me overall, Xavi edges it. Eze been doing it in Premier League for a few seasons so hard comparison, however Xavi has been doing it in Europe and at International level and he is only 22. He clearly has more talent and has more of a ceiling. Look at Eze at 22 and he wasn't very good, just raw. In all, we got a much better deal with Xavi. In hindsight £68m on a 27 yr old Eze is a bit much.
Can't say Simons is better. Chelsea probably went for Simons and Garnacho but was never going to sign both so in this case Garnacho probably Chelsea first choice. Simons can play multiple positions but as a 10 he is not any better than Palmer.

Until now Eze has never played for any top teams whil Simons is a product of the Barcelona Youth academy and played for a bunch of champions League teams. Skills aside, that exposure will have left a winners mentality on him and I think that we were lucky to have mossed out on Eze since Simons seems a much better choice
